How to cook your noodles

During the cooking process, our noodles increase in volume, up to three fold, therefore it is important to select a cooking pot of sufficient size.

For each 250gm packet of noodles, you require at least 2 litres of water and 2 teaspoons of salt. In an uncovered saucepan bring the water to the boil, add salt, stir then add noodles. Noodles should not be covered while cooking. If stirring is necessary use a wooden spoon. Cook to taste (al dente). Refer to packet for individual cooking times.

Drain the noodles at once and serve while hot.

 

Quick Lamb Stir Fry

Preparation time: 10 minutesr Serves 4

  • 250g Wiech's Fine Egg Noodles
  • cooked & drained 500g lamb strips
  • 1/2 cup teriyaki sauce
  • 2 tspns olive oil
  • 2 onions cut in wedges
  • 2 large carrots cut into sticks
  • 1 red capsicum thinly sliced
  • 200g snow peas
  1. Combine lamb strips & 2 tablespoons teriyaki sauce. Marinate 5 minutes.
  2. Add oil to hot wok and stir fry drained lamb in small batches for 1 minute.
  3. Remove from wok. Add onion and stir fry for 2 minutes.
  4. Add carrot, capsicum and snow peas and stir fry 2 minutes.
  5. Add remaining teriyaki sauce and 2 tablespoons water.
  6. Cook for a further 1 minute. Add lamb, noodles and toss.
Tips
  • Try using beef instead of lamb.
  • Try adding sliced halved baby corn.

 

Noodle Frittatas

Serves 12

  • 250g Wiech's Fine Egg Noodles, cooked and drained
  • 6 eggs lightly beaten
  • 1 can sweetcorn drained
  • 4 green shallots chopped
  • 1/2 cup grated cheese
  • 2 tablespoons sweet chilli sauce
  • 2 teaspoons soy sauce
  1. Put cooked and drained noodles into bowl, and combine with all ingredients, mixing well.
  2. Spoon into greased muffin tins.
  3. Bake in a moderate oven (180C), for 15 to 20 minutes, or until firm.
  4. Run a knife around each frittata to loosen from tin.
  5. Turn onto a wire rack to cool.
  6. Serve warm or cold.
Tips:
  • Try serving with a little sour cream and chilli sauce.
  • Try using a pie dish or slab tin and cook for 30 to 35 minutes.

 

Low Fat Creamy Ribbons

Serves 4

  • 250g Wiech's Ribbon Egg Noodles - cooked and drained,
  • 2 cloves garlic crushed,
  • 300ml Carnation Light & Creamy Evaporated Milk,
  • 1 tablespoon cornflour,
  • 4 cups roasted vegetables – onion, pumpkin, tomatoes, sweet potato etc,
  • basil leaves and parmesan cheese to garnish.
  1. Spray a wok with cooking spray.
  2. When hot, sauté garlic for 1 minute.
  3. Blend a little evaporated milk with the cornflour until smooth. Set aside.
  4. Pour remaining evaporated milk into wok.
  5. Bring to the boil, stirring.
  6. Add cornflour and milk mixture to pan.
  7. Stir until thickened, Simmer for 3 minutes.
  8. Stir in roasted vegetables, tossing well.
  9. Mix cooked pasta into sauce.
  10. Serve immediately with basil leaves and shaved parmesan cheese if desired.
Tip:
  • To roast vegetables place into a baking dish with 2 tablespoons oil. Bake in a moderate oven (180C) for 10 to 15 minutes or until tender. Use any vegetables of your choice to roast. For variety, sauté sliced ham with the garlic and continue as directed.

 

Simple Ribbon Carbonara

Serves 4

  • 250g Wiech's Ribbon Egg Noodles,
  • 4 bacon rashes chopped,
  • 3 egg yolks beaten,
  • 1 cup(250ml) cream,
  • 1/2 cup grated parmesan cheese,
  • 2 tablespoons chopped fresh chives.
  1. Cook bacon in heated frying pan, stirring until crisp. Drain.
  2. Just before serving, cook noodles in large saucepan of boiling water, uncovered until just tender. Drain.
  3. Combine pasta in warmed large bowl with yolks, cream and cheese.
  4. Sprinkle with chives and freshly ground black pepper.

 

Spicy Avocado and Tomato Noodles

Serves 4

  • 250g Wiech's Spaghetti Egg Noodles,
  • 3 tomatoes chopped,
  • 1 avocado peeled and chopped,
  • 1/2 green capsicum seeded and chopped,
  • 2 tablespoons balsamic vinegar,
  • 1 tablespoon lemon juice,
  • 1 chilli seeded and chopped,
  • 2 teaspoons grated lemon rind (optional),
  • black pepper to taste, sour cream, corn chips.
  1. Place tomatoes, avocado, capsicum, vinegar, juice, chilli ,rind, and pepper in a bowl.
  2. Mix well.Cook spaghetti in plenty of boiling water and drain well.
  3. Place a liberal serve of Spaghetti in a pasta bowl and top with avocado and tomato mixture.
  4. Serve with sour cream, corn chips, crusty bread and salad.

 

Noodle and Pine Nut Salad

  • 250g Wiech's Spaghetti Egg Noodles, cooked, drained and cooled,
  • 1 bunch asparagus lightly cooked and sliced, or 1 can sweetcorn,
  • 1 small red capsicum chopped, 1 red onion chopped,
  • 1/2 cup pine nuts, 1/3 cup sun dried tomatoes chopped,
  • 1/4 cup basil chopped.Dressing1/4 cup lemon juice,
  • 1/4 cup olive oil,
  • 2 teaspoons brown sugar,
  • 2 teaspoons chilli sauce, salt and freshly ground black pepper to taste.
  1. Combine pasta with remaining ingredients in a large bowl and mix well.
  2. Whisk all dressing ingredients together, and toss through salad.Transfer to 1 large or 4 small individual serving bowls.
  3. Serve with crusty bread.

 

Meal suggestions for Fine noodles

  • Chicken Noodle Soup can be made by boiling 2 litres chicken stock then adding grated carrot & onion, chopped celery, fine noodles, oregano, salt & pepper. If boiling a chicken for stock, add cooked chicken meat back to soup.
  • For a heartier meal, add noodles to tomato soup.
  • Stir Fry cooked noodles with cocktail prawns, shallots, sliced carrot, shredded cabbage & soy sauce - delicious.
  • Mix together cooked noodles, eggs, sweetcorn, shallots, chilli & soy sauce. Pour into quiche dish, top with grated cheese & praprika, & bake in oven.
  • Toss hot cooked noodles with olive oil, finely chopped chilli, tomatoes,basil, parsley and rocket. Serve topped with crumbled fetta.
  • Add cooked noodles to any of your favourite stir fries.
  • Try fried noodles instead of fried rice.
  • Frittatas can be made more filling by mixing cooked noodles into ingredients, then baking.
  • Beautiful with any light sauces or seafood

 

Meal suggestions for Ribbon noodles

  • Beautiful used in Minestrone Soup. Add l0 minutes before serving.
  • Try this salad - Saute onions & bacon, add to 250g cooked noodles, together with equal parts tomato sauce,mayonnaise & french dressing. Salt & pepper to taste.
  • Vegetables of your choice may be added for variety.
  • Fantastic with cream or butter based sauces:
    • Alfredo - Gently heat butter & cream, add cheese. When smooth spoon over hot cooked noodles, sprinkle with parsley.
    • Carbonaro - Cook bacon until crisp. Combine eggs,cream, & parmesan cheese with cooked noodles. Sprinkle with chives & black pepper.
  • Delicious served with any of your favourite casseroles.
  • Team a goulasch or stroganoff with hot cooked noodles, garlic bread and tossed salad.
  • Combine cooked noodles with diced zucchini, green beans & peas. Stir in 2 tblsps pesto. Serve with grated parmesan and fresh basil.
  • To all mushroom lovers - gently heat & melt 200gm Light Philly Cheese. Add mushrooms, black pepper & milk to blend. Serve over cooked noodles.
  • For a refreshing tang - Cook & drain noodles. In large saucepan combine noodles, rind of lemon, 415g can salmon, 1/2 cup cream, 4 sliced shallots.
  • Stir till hot & serve. Sprinkle with black pepper & parsley.
